Ice Cream: In 0 to 30 Seconds

Oh, this just looks way too cool:  using liquid nitrogen to make ice cream.  Apparently, it only takes about 30 seconds, which is a far cry from the more typical 30 minutes (or more) it normally has to spend freezing.  What’s really cool about this is that the way the ice crystals form is different and thus you get a very smooth and creamy product.

Too bad liquid nitrogen isn’t easy to get and can be really dangerous to work with…

Yeah, that’s how Dippin’ Dots are made.  My friend’s wife here worked at the Dippin’ Dot factory for awhile--it’s very much like Wonka’s factory, and they use a combo of liquid nitrogen to make the pellets, and dry ice for storage.
